Any kind of chicken is awesome with Crescent Moon sauce.

OK Here's the simplest and most inexpensive great tasting main course ever, plus it goes great with a fruity red wine.

In a medium size baking dish

1. One regular size can of Spam.

2. One small can of Dole pineapple slices.

3. One T/Sp Rub.

Drain juice from pineapple into baking dish.

Add 1 tablespoon of Barrier Island Rub and stir till mostly disolved.

Place 3 pineapple rings in center of dish side by side by side, like a clover leaf, surrounded by juice mixture.

Slice horizontal lines in top flat area of the Spam about 1/4 in. deep.

Place whole Spam in dish centering on the 3 pineapple rings.

Add 1 whole pineapple ring on top of Spam and pierce with fork to let juice escape.

Cover and put in 300" preheated oven for 30 min. occasionally basting with the drippings.

Partners up with Mac and Cheese or Cheesy Noodles.
